Baked Garlic Potatoes

Yield: 8 Servings

  • 6 lg Baking potatoes; baked, halved lengthwise
  • Pulp from two heads roasted garlic
  • 2 tb Olive oil
  • 2 ts Olive oil
  • 2/3 c  Chicken broth
  • 3/4 ts Salt
  • 1/2 ts White pepper
  • 3 tb Grated Parmesan
  • Paprika

Heat oven to 425°.

Scoop out potato pulp, reserving 8 shells. Mash pulp with remaining ingredients except cheese and paprika until creamy and smooth. Spoon back into shells; sprinkle with cheese and paprika.

Bake 10 minutes until golden and heated through.
